Avocado Mango Salad with Lime Poppy Seed Vinaigrette

Ingredients

  • For the vinaigrette:
  • 1 large shallot minced
  • 3 limes juiced (about ¼ cup)
  • 1 tablespoon honey
  • 1 tablespoon poppy seeds
  • ¼ cup plus 2 tablespoons olive oil
  • For the salad:
  • 2 (6 cups) heads of romaine, sliced, or your favorite lettuce
  • 1 cup diced cucumber
  • cups diced pineapple
  • cups diced mango
  • ½ cup fresh blueberries
  • 2 cups diced avocado
  • 1 tablespoon fresh lime juice
  • ½ salt
  • pinch pepper
  • ½ cup shelled pistachios

Instructions

  • To make the vinaigrette:
  • Whisk all the ingredients in a medium size bowl. Transfer the vinaigrette to a jar with a lid and refrigerate until ready to use.
  • To make the salad:
  • Add the diced avocado to a medium bowl. Season with salt and pepper and toss with 1 tablespoon lime juice. This will prevent the avocado from browning too quickly.
  • Assemble all the ingredients on a large platter in a fashion you find most appealing.
  • When ready to serve, drizzle with the lime poppy seed vinaigrette and top with shelled pistachios.
