- For the vinaigrette:
- 1 large shallot minced
- 3 limes juiced (about ¼ cup)
- 1 tablespoon honey
- 1 tablespoon poppy seeds
- ¼ cup plus 2 tablespoons olive oil
- For the salad:
- 2 (6 cups) heads of romaine, sliced, or your favorite lettuce
- 1 cup diced cucumber
- 1½ cups diced pineapple
- 1½ cups diced mango
- ½ cup fresh blueberries
- 2 cups diced avocado
- 1 tablespoon fresh lime juice
- ½ salt
- pinch pepper
- ½ cup shelled pistachios
To make the vinaigrette:
Whisk all the ingredients in a medium size bowl. Transfer the vinaigrette to a jar with a lid and refrigerate until ready to use.
To make the salad:
Add the diced avocado to a medium bowl. Season with salt and pepper and toss with 1 tablespoon lime juice. This will prevent the avocado from browning too quickly.
Assemble all the ingredients on a large platter in a fashion you find most appealing.
When ready to serve, drizzle with the lime poppy seed vinaigrette and top with shelled pistachios.
