Dirty Martini Pimento Cheese is a mash-up of two of my favorite things: pimento cheese and olives. It's the addition of olive brine that makes this dirty...and extra playful!

Add all the ingredients into a large bowl and mix well to combine. Taste and adjust seasonings, if needed.
Form into a ball using plastic wrap and chill for 1-2 hours before serving.
Allow the cheeseball to sit at room temperature for at least 30 minutes before serving. Serve with bread, crackers, and assorted vegetables. Or spoon over hot potatoes, vegetables, etc.

Store well wrapped or in an airtight container in the refrigerator for up to 2 weeks.May be frozen, but once thawed it is best used melted for a sauce as the consistency may change.
