Brown the bacon well in a large soup pot or Dutch oven over medium/high heat. Drain the grease from the bacon (optional).
Add the ground beef to the pot with the bacon and brown until the beef is thoroughly cooked. Season with salt and pepper.
Add the dehydrated onion, baked beans and their liquid, ketchup, mustard, molasses, Worcestershire sauce, beef stock (or broth), and the bay leaves, if using. Stir gently to combine. Reduce the heat to medium/low and simmer for 20 minutes.
Turn off the heat, remove the spent bay leaves (if applicable), and add the butter (if using) to the soup. Allow the butter to melt, and stir well before serving.
