WHITE BEAN AND ARTICHOKE HUMMUS
White Bean and Artichoke Hummus is a creamy, buttery-tasting spread, with an ever so slight tang from artichokes. It's the perfect dip for when you want sometime decedent tasting, but still healthy.

Ingredients
1
can (15 ounces)
chickpeas (garbanzo beans)
drained
1
can (15 ounces)
cannellini beans (white beans)
drained
1
can (14 ounces)
artichoke hearts
reserve the liquid
1
teaspoon
fresh lime juice
3
cloves
garlic
1
tablespoon
minced shallots
3
tablespoon
extra virgin olive oil
1
teaspoon
sesame oil
1
teaspoon
ground coriander
1
teaspoon
coarse salt
½
teaspoon
black pepper
Instructions
Add all the ingredients (except for the reserved artichoke liquid) into a food processor or high-speed blender and blend until creamy.
If needed, thin the hummus to your desired consistency by adding some of the reserved artichoke liquid.
Add to a bowl and serve with assorted vegetables or chips.
Notes
Store in an airtight container in the refrigerator for 7-10 days.
