Sloppy Jose Pork Sausage Sandwiches

If you're looking for something a little different from the average ground beef sloppy "Joe," these Sloppy José pork sausage sandwiches are the way to go!!

Ingredients

  • 1 pound bulk pork sausage
  • 1 tablespoon olive oil
  • 1 red onion chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 cans (4 ounce, each) fire-roasted chilies
  • 1 can (15 ounces) black beans drained
  • 1 tablespoon chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked cumin
  • ½ teaspoon ground red pepper
  • 3 tablespoons tomato paste
  • 1 can (28 ounces) crushed tomatoes
  • 2 teaspoons fresh lime juice approximately 1 lime
  • 3 green onions diced (garnish)
  • 1 cup shredded Monterey Jack cheese or your favorite cheese variety
  • 6 Hamburger buns

Instructions

  • -In a large skillet over medium-high heat, brown the pork sausage with the olive oil until no longer pink.
  • -Add the red onion, salt, pepper, and garlic powder, stirring to combine.
  • -Turn the heat down to medium.
  • -Add the fire-roasted chilies, black beans, chili powder, coriander, cumin, red pepper, tomato paste, and crushed tomatoes.
  • -Stir well to combine and continue cooking for approximately 10 minutes (As it cooks down, it will thicken).
  • -Add the lime juice just before removing it from the heat and mix it thoroughly.
  • -In another skillet, over medium-high heat, toast the hamburger buns cut side down for a few minutes each.
  • -Spoon the Sloppy José mixture onto the toasted buns and garnish with the green onions and jack cheese (not shown).
