LOADED SKILLET POTATOES

Loaded Skillet Potatoes will work as a main course or side dish. You decide. No matter how you choose to serve them, you simply can't go wrong!

Ingredients

  • 5 large russet potatoes pre-cooked
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon coarse salt
  • ½ teaspoon black pepper
  • 1 cup caramelized onions
  • 1 cup diced ham
  • ½ cup bacon diced and cooked
  • 1 cup black beans drained
  • 1 cup shredded cheddar cheese
  • 1 cup Pepper Jack cheese
  • ½ cup chopped scallions

Instructions

  • Preheat oven to 350-degrees.
  • Heat a large skillet over medium/high heat.
  • Melt the butter and olive oil in the skillet, and add the pre-cooked diced potatoes in an even layer, along with the salt and pepper.
  • Cook, stirring only occasionally so the potatoes form a crispy brown crust (approximately 10-12 minutes)
  • Layer the caramelized onions, ham, black beans, bacon, and cheeses over the cooked potatoes.
  • Carefully place the skillet into the preheated oven and heat until the cheese is thoroughly melted (approximately 10 minutes).
  • Carefully remove the skillet from the oven and top with chopped scallions (if desired).
  • Serve hot.
