- 5 large russet potatoes pre-cooked
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 teaspoon coarse salt
- ½ teaspoon black pepper
- 1 cup caramelized onions
- 1 cup diced ham
- ½ cup bacon diced and cooked
- 1 cup black beans drained
- 1 cup shredded cheddar cheese
- 1 cup Pepper Jack cheese
- ½ cup chopped scallions
Preheat oven to 350-degrees.
Heat a large skillet over medium/high heat.
Melt the butter and olive oil in the skillet, and add the pre-cooked diced potatoes in an even layer, along with the salt and pepper.
Cook, stirring only occasionally so the potatoes form a crispy brown crust (approximately 10-12 minutes)
Layer the caramelized onions, ham, black beans, bacon, and cheeses over the cooked potatoes.
Carefully place the skillet into the preheated oven and heat until the cheese is thoroughly melted (approximately 10 minutes).
Carefully remove the skillet from the oven and top with chopped scallions (if desired).
Serve hot.
