Linguine with Lamb, Red Wine, and Rosemary

Ingredients

  • 2 pounds ground lamb
  • ½ large red onion chopped, about ¾ cup
  • pinch red pepper flakes more if you like it spicy hot
  • ½ cup low-sodium beef stock or broth
  • ½ cup red wine
  • 1 tablespoon fresh rosemary chopped
  • 2 tablespoons butter
  • 1 can (14.5 ounces) diced tomatoes, with their liquid
  • 1 teaspoon balsamic vinegar
  • 1 pound box dried linguine cooked according to package directions, reserving ¾ cup of the cooked pasta water.

Instructions

  • Cook and drain the linguine according to package directions. Keep warm (not shown).
  • In a large skillet, brown the ground lamb over medium/high heat.
  • Add the onion and red pepper flakes.
  • Cook, stirring occasionally for 1-2 minutes.
  • Reduce the heat to low and stir in the beef stock, wine, butter, tomatoes, vinegar, and the pasta water.
  • Cook, stirring occasionally, to slightly reduce (approximately 5 minutes).
  • Toss the lamb and sauce with the cooked pasta.
  • Garnish with Parmesan cheese if desired, and serve.
