- 1½ pounds baby potatoes cut in half
- 1 tablespoon olive oil
- 2 tablespoons lemongrass paste
- 1 teaspoon fresh thyme leaves
- 1 teaspoon fresh lemon zest
- 1½ teaspoons coarse salt
- ½ teaspoon black pepper
Place all the ingredients in a large bowl and toss (or stir) to coat.
