Ingredients
For the salad;
3 - 4
cups
mixed greens and baby spinach leaves
2
blood oranges
peeled and sliced
2
cups
fresh blueberries
¼
cup
thinly sliced red onions
1
avocado
pitted and sliced
3
ounces
goat cheese
crumbled
1
cups
chopped pistachios
½
teaspoon
salt
¼
teaspoon
pepper
½
cup
extra virgin olive oil
For the dressing;
¼
cup
tangerine balsamic vinegar
or your favorite balsamic vinegar

tablespoon
Dijon mustard
¼
teaspoon
poppy seed
¼
teaspoon
ground coriander

salt

pepper

avocado oil
Instructions
Place the greens in the bottom of a large, shallow salad bowl.
Layer the remaining ingredients over the greens.
Place all the dressing ingredients into a jar with a tight-fitting lid and shake vigorously to combine.
Drizzle the dressing over the salad and serve cold.
