Streusel Topped Strawberry Apple Pie
Who would have ever thought that a strawberry apple pie would be so good? The combination of ingredients in this luscious fruit pie complements each other nicely, without a dominant ingredient hogging center stage.

To make the pie dough:
- 1½ cups all-purpose flour
- ¼ teaspoon salt
- ½ cups cold shortening cut into small pieces
- 4 tablespoons chilled butter cut into small pieces
- ¼ teaspoon apple cider vinegar optional
- 3 tablespoons ice water
To make the filling:
- 2 small Granny Smith apples peeled, cored, and sliced into ¼" slices
- 1 pint strawberries hulled and sliced into approximately ½" pieces
- ⅓ cup granulated sugar
- ⅓ cup packed brown sugar
- 3 tablespoons cornstarch
- ⅛ teaspoon grated nutmeg
- ⅛ teaspoon salt
- 1 teaspoon pure vanilla extract
- 3 tablespoons strawberry jam
To make the streusel topping:
- ½ cup all-purpose flour
- ¼ cup granulated sugar
- ¼ cup brown sugar
- ½ cup quick cooking oats
- 4 tablespoons butter
- ⅛ teaspoon salt
- ⅛ teaspoon grated nutmeg optional
To make the pie dough (or store-bought can be used, see below):
In a food processor (or large bowl with a pastry blender), add the all-purpose flour, salt, cubed chilled butter, cubed chilled shortening, and pulse until it resembles coarse crumbs.
Add ice water, and apple cider vinegar and pulse again until the mixture holds together when about 2 tablespoons are squeezed in your hand.
Turn the dough out onto the counter and form it into a ball. *Note - the mixture will be crumbly.
Place the dough onto plastic wrap and press the dough into a flattened disc.
Wrap well in plastic wrap and chill the flattened disc at least 60 minutes.
To make the filling:
Peel and slice 2 granny smith apples to approximately ¼" thickness. Place in a large bowl.
Hull and slice 1 pint of fresh strawberries (to approximately ½" thickness). Add to the bowl with the apples.
Add granulated sugar, brown sugar, pure vanilla extract, ground nutmeg, cornstarch, and a pinch of salt.
Stir gently to combine. Set aside.
To make the streusel topping:
In a medium bowl, work the butter into the flour, sugar, brown sugar, oatmeal, salt, and ground nutmeg by using fingertips or a pastry blender until it resembles coarse crumbs. Set aside.
To assemble and bake the strawberry apple pie:
Preheat oven to 375-degrees Fahrenheit (190 degrees Celsius).
Roll the pie dough out onto a lightly floured surface to approximately 9" circle.

Transfer the pie dough to a pie plate that has been sprayed with baking spray.
If needed, evenly press the dough into the pie plate using fingertips to an even thickness on the bottom and sides of the pie pan.
Gently brush the strawberry jam over the bottom of the pie dough, and dock the dough with the tines of a fork so bubbles don't form while baking.
Drain any excess liquid from the prepared pie filling and then spoon the filling evenly into the bottom pie crust.
Top the fruit filling evenly with the streusel topping and place the pie onto a baking sheet that has been lined with parchment paper.
Bake the pie in a preheated oven for 60 minutes, or until the pie is golden brown and the filling is bubbling.
Cool completely on a wire rack before serving.
Store pie, covered in plastic wrap, in the refrigerator for up to 5 days.
Not recommended for freezing as it may become soggy upon thawing.
