- 1½ cup diced onion
- 1 cup diced carrots
- 1 cup diced celery
- 1½ pounds chicken thighs boneless, skinless, diced
- 3 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 quart chicken or turkey stock
- 2 cups water
- 1½ cups pearl barley
Place all ingredients into a 7-quart slow cooker.
Cover and cook on medium for 8 hours, or high for 5 hours.
Stir well and serve hot.
