Honey Dijon Pork Tenderloin

Ingredients

  • 2½ - 3 pound pork tenderloin
  • 2 tablespoons Dijon Mustard
  • tablespoons honey
  • 2 cups breadcrumbs
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon fresh lemon zest
  • 2 teaspoons coarse salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 tablespoons olive oil

Instructions

  • Preheat oven to 350 degrees Fahrenheit
  • Dry the pork tenderloin pieces well with paper towel. Set aside.
  • In a small bowl stir together the Dijon mustard and honey.
  • In a shallow dish, mix together the breadcrumbs, parsley, lemon zest, salt, pepper, and garlic powder.
  • Brush the Dijon and honey mixture liberally onto the pork tenderloin.
  • Roll and press the honey Dijon coated pork tenderloin into the seasoned breadcrumbs to coat.
  • Place each coated tenderloin into a baking dish that has been sprayed with olive oil spray or cooking spray.
  • Drizzle the pork with the olive oil.
  • Roast in the preheated oven for 40-45 minutes (or until the internal temperature of the pork reads 145 degrees on an instant-read thermometer).
  • Remove the pork from the oven and allow to rest for 5-10 minutes before slicing.
  • Enjoy!
