- 2½ - 3 pound pork tenderloin
- 2 tablespoons Dijon Mustard
- 1½ tablespoons honey
- 2 cups breadcrumbs
- 3 tablespoons chopped fresh parsley
- 1 tablespoon fresh lemon zest
- 2 teaspoons coarse salt
- 1 teaspoon black pepper
- 2 teaspoons garlic powder
- 2 tablespoons olive oil
Preheat oven to 350 degrees Fahrenheit
Dry the pork tenderloin pieces well with paper towel. Set aside.
In a small bowl stir together the Dijon mustard and honey.
In a shallow dish, mix together the breadcrumbs, parsley, lemon zest, salt, pepper, and garlic powder.
Brush the Dijon and honey mixture liberally onto the pork tenderloin.
Roll and press the honey Dijon coated pork tenderloin into the seasoned breadcrumbs to coat.
Place each coated tenderloin into a baking dish that has been sprayed with olive oil spray or cooking spray.
Drizzle the pork with the olive oil.
Roast in the preheated oven for 40-45 minutes (or until the internal temperature of the pork reads 145 degrees on an instant-read thermometer).
Remove the pork from the oven and allow to rest for 5-10 minutes before slicing.
