No Mayo Sweet Sour Coleslaw

Ingredients

  • 6 cups shredded green cabbage thinly sliced
  • 2 cups shredded red cabbage
  • 1 small (about ½ cup) red onion thinly sliced
  • ¾ cup chopped scallions white and green parts
  • ½ cup roughly chopped cilantro
  • 2 cups shredded carrots
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

For the dressing:

  • cup apple cider vinegar
  • ½ cup avocado oil
  • 1 teaspoon ground coriander
  • 3 tablespoons granulated sugar
  • 2 teaspoons Dijon mustard
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  • Combine the first 8 ingredients in a large bowl and stir well to combine. Set aside.
  • Combine the dressing ingredients in a jar with a tight fitting lid and shake vigorously to combine.
  • Pour the dressing over the cabbage mix and stir well to completely coat the slaw with the dressing.
  • Cover the slaw with plastic wrap and chill in the refrigerator at least 4 hours before serving.
  • Stir again before serving and enjoy!
