COPYCAT EGG MCMUFFIN SANDWICH

Skip the drive-through and make your own Copycat Egg Mc Muffin Sandwich at home in your air fryer (or skillet). You'll be glad you did!

Ingredients

  • 4 large eggs
  • tablespoons butter salted
  • 4 English muffins split in half
  • 4 slices Canadian bacon
  • 4 slices American cheese

Instructions

  • Melt the butter (at 370 degrees) in the flat tray of an air fryer pan. (Or melt the butter in a nonstick skillet)
  • Use a pastry brush to spread the melted butter all around the tray and also up the sides of the round egg molds.
  • Crack the eggs and drop them into the egg molds.
  • Season with salt and pepper.
  • Cook at 370-degrees for 3½-4 minutes or until the eggs are set. (Or cook in the skillet until set)
  • Meanwhile, split and toast the English muffins.
  • When the eggs are cooked, top one side of an English muffin with a slice of Canadian bacon, a cooked egg, and a slice of American Cheese.
  • Place the top half of the English muffin onto the egg sandwich and return to the air-fryer for 1 minute to melt the cheese. (Or pop into the microwave for 15-20 seconds)
  • Serve immediately, or wrap well in parchment paper and refrigerate (or freeze) individually in air-tight containers or zip-top bags.

Notes

Wrap each sandwich well in plastic wrap and cooked sandwiches may be frozen for up to 2 months.
To cook after freezing, unwrap the sandwiches and cover loosely with paper towel.  Microwave on 50% power until hot. Time will depend on your microwave so check occasionally for doneness.
