- 2 pounds ground lamb
- ½ large red onion chopped, about ¾ cup
- pinch red pepper flakes more if you like it spicy hot
- ½ cup low-sodium beef stock or broth
- ½ cup red wine
- 1 tablespoon fresh rosemary chopped
- 2 tablespoons butter
- 1 can (14.5 ounces) diced tomatoes, with their liquid
- 1 teaspoon balsamic vinegar
- 1 pound box dried linguine cooked according to package directions, reserving ¾ cup of the cooked pasta water.

Cook and drain the linguine according to package directions. Keep warm (not shown).
In a large skillet, brown the ground lamb over medium/high heat.
Add the onion and red pepper flakes.
Cook, stirring occasionally for 1-2 minutes.
Reduce the heat to low and stir in the beef stock, wine, butter, tomatoes, vinegar, and the pasta water.
Cook, stirring occasionally, to slightly reduce (approximately 5 minutes).
Toss the lamb and sauce with the cooked pasta.
Garnish with Parmesan cheese if desired, and serve.
