Whisk together the eggs, milk, vanilla extract and salt in a shallow bowl.
Coat each slice of bread (both sides) in the egg mixture for 20 seconds per side. Remove the bread and set aside.
Whisk together the sugar, cinnamon, and nutmeg in a shallow bowl. Set aside.
Heat the skillet to medium.
Add 1 tablespoon of butter (per two slices of French toast) to the skillet and gently fry the French toast on both sides, until golden brown.
Remove the browned French toast from the skillet and immediately toss it in the cinnamon and sugar to coat.
Place the completed French toast on a baking sheet fitted with a rack, and keep warm in a preheated 275-degree oven.
Continue the same process with the remaining French toast.
Serve warm with maple syrup if desired.
