Sloppy Joe over Cornbread Waffles

In the time it takes you to open a can of Sloppy Joe mix you can whip up your own homemade Joe sauce to make this kid-friendly, soon to become a favorite family dinner of Sloppy Joe over Cornbread Waffles.

Ingredients

To make the cornbread waffles;

  • 2 cups all-purpose flour
  • cups yellow cornmeal
  • 1 tablespoon baking powder
  • 2 teaspoons granulated sugar
  • teaspoons smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups milk
  • 2 large eggs
  • 2 tablespoons oil, grapeseed or canola
  • 1 4 ounce can fire roasted chiles

To make the sloppy Joe's;

  • 2 pounds ground beef, 80/20 blend
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 2 tablespoons prepared yellow mustard
  • 2 tablespoons red wine vinegar
  • 2 tablespoons packed brown sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese

Instructions

To make the sloppy Joe:

  • In a large skillet, brown the ground beef over medium/high heat.
  • Reduce the heat to medium/low and stir in the remaining ingredients.
  • Simmer for approximately 10 minutes.
  • Serve on a bun or over cornbread waffles (recipe follows) and top with cheddar cheese.

To make the waffles:

  • Preheat waffle iron while you make the batter.
  • In a large bowl, whisk together the flour, cornmeal, baking powder, sugar, paprika, salt, and pepper.
  • In a small bowl, whisk together the milk, eggs, oil, and chiles.
  • Stir the wet ingredients into the dry ingredients until blended.
  • Make waffles as usual.

Notes

Note: 
The cornbread waffles can be made in advance and frozen if needed. To reheat, pop them into a toaster, or heat in a 325-degree oven on a rack to keep them crunchy.
Tools and equipment:
large skillet, cutting board and chef's knife, wooden spoon, measuring cups and spoons, waffle iron, large bowl, medium bowl, and cooking spray (for the waffle iron).
