Ingredients

For the salad;

  • 3 - 4 cups mixed greens and baby spinach leaves
  • 2 blood oranges peeled and sliced
  • 2 cups fresh blueberries
  • ¼ cup thinly sliced red onions
  • 1 avocado pitted and sliced
  • 3 ounces goat cheese crumbled
  • 1 cups chopped pistachios
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup extra virgin olive oil

For the dressing;

  • ¼ cup tangerine balsamic vinegar or your favorite balsamic vinegar
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon poppy seed
  • ¼ teaspoon ground coriander
  • pinch salt
  • pinch pepper
  • ½ cup avocado oil

Instructions

  • Place the greens in the bottom of a large, shallow salad bowl.
  • Layer the remaining ingredients over the greens.
  • Place all the dressing ingredients into a jar with a tight-fitting lid and shake vigorously to combine.
  • Drizzle the dressing over the salad and serve cold.

Notes

Refrigerate any leftover dressing and keep for up to 5 days in the refrigerator.
