1box orzo pastacooked to package directions and drained.
⅓cupfresh lime juiceapproximately 3-4 limes
¼cupextra virgin olive oil
½teaspoonsalt
¼teaspoonpepper
2tablespoonsminced shallots
2teaspoonsDijon mustard
1tablespoonhoney
1½cupscorn kernelsfrozen will work
1½cupsfresh blueberries
¼cupchopped scallions
¼cupchopped fresh cilantroplus more for garnish if desired
Instructions
Add the cooked pasta to a large bowl.
In a medium bowl, whisk together the lime juice, olive oil, salt, pepper, shallots, mustard, and honey. Pour the dressing over the pasta and stir to combine.
Add the corn, blueberries, scallions and ¼ cup of the chopped cilantro. Stir well.
Cover and refrigerate for at least 4 hours, or overnight.
Serve chilled or at room temperature.
Notes
Store in the refrigerator in a covered container for up to 7 days.
