This Easy Colorful Holiday Vegetable Saute is a feast for the eyes as well as the taste buds, and it the perfect accompaniment to any holiday meal.

  • 2 tablespoons grapeseed or canola oil
  • 2 tablespoons butter
  • 1 medium onion chopped
  • 2-3 cups butternut squash peeled, seeded and cut into 1" cubes
  • 3-4 cups fresh Brussels sprouts trimmed and halved or quartered
  • 1/8 teaspoon freshly grated nutmeg or a slightly less amount of ground nutmeg
  • ½ cup orange juice
  • cup fresh cranberries
  • 2 tablespoons honey
  • 2 teaspoons kosher salt
  • ½ teaspoon ground black pepper
  1. In a very large skillet, heat the oil and butter over medium/high heat.
  2. Add the onion, butternut squash, and Brussels sprouts.
  3. Cook and stir occasionally for approximately 7-10 minutes.
  4. Add the nutmeg, salt, and pepper.
  5. Stir in the orange juice, cranberries, and honey.
  6. Reduce the heat to medium and cook, stirring occasionally, for an additional 3-5- minutes.
  7. Serve immediately.
