These Tropical Popsicles (trop-pops, as I like to call them) are a delicious and healthy way to cool down on a hot summer's day.
*Disclaimer - This recipe was originally published in 2013. I'm working hard to update all my older recipes with recipe cards, new photos, and additional recipe information. But, getting to all of them will take time. Please bear with me. In the meantime let me assure you that this recipe is still a winner and one I'm sure you'll be well pleased with when you make it at home.
Seems like homemade Popsicles and ice-cream bars are all the rage this summer. Naturally, I had to jump on that bandwagon and get my blend on!
My Trop-Pop popsicles are cool and refreshing and they replace all sorts of electrolytes in your body that a hot summer's day may have depleted.
Why?
Because rather than just plain water or juice as the blending ingredient, I chose to use coconut water which has been dubbed "Mother Nature's Sports Drink".
Did you know that one serving of coconut water has more potassium than 4 bananas and will hydrate your body like nothing else?
Yep. True story!
These Trop-Pops are kind of like jumping into a swimming pool on a hot and humid summer day. 🙂
Ahhhhhhhhh! REFRESHING!
TROP-POPS {PRINT THIS RECIPE}
Yield - 12 pops
3 cups coconut water
2 cups frozen pineapple
1 tablespoon fresh lime juice
3 tablespoons unsweetened coconut
1 cup frozen strawberries
-Add all ingredients into a heavy-duty blender and blend until smooth.
-Fill popsicle molds and freeze until solid.
So go ahead and have two...They're good AND good for you!!!

I've also recently heard that if you drink coconut water before bed, it will plump your skin and help fight wrinkles as you sleep. I'm all for that!!

LOL. Thanks Suzanne. It was actually my son that came up with the name. I called them Tropical Popsicles and he said "You mean Trop-Pops?". Done!
