Teriyaki Turkey Burger Recipe

I swear, you won’t be saying “Where’s the beef” when you bite into these moist and flavorful burgers.  Why? Because you won’t miss it!!!

All I have to say is “try them, you’ll like them”.  HA HA! I’m not quite sure why I’m channeling some circa 1980’s TV commercials this morning, but they seem to fit the occasion 🙂

The above may be a weird picture to lead with but honestly, I forgot to take any “beauty shots” before we sat down to eat. It was one of those nights when I was just so famished that I could hardly wait to sit my butt down at the dinner table.

I also didn’t serve these burgers with any sort of bun (much to my husband’s dismay) because I wasn’t interested in adding the additional calories. Plus, without the bun I could even have 2 burgers and not feel the least bit guilty about it (girl logic, LOL). Mind you, nobody was stopping HIM from adding his own bun but that would mean he’d have to thaw some out from the freezer and that just wasn’t going to happen! Did I mention I was famished?

Hubby is not a huge fan of turkey burgers of any kind, but these he real DID enjoy (even without the buns). The only thing he did request is that I make some without the pineapple topping. To this, I happily obliged.

290 calories (without the bun) – Makes 6-7

1 pound ground turkey
1/2 cup dry breadcrumbs
1 medium red onion, diced small
1 cup red peppers, diced small
2 cloves garlic, minced
1 teaspoon ground ginger
1 teaspoon ground coriander
3 tablespoons reduced sodium teriyaki sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons canola oil
1 can sliced pineapple ring, drained
1 cup shredded fat free mozzarella

-Preheat oven to 350 degrees
-In a large bowl, add the first 10 ingredients and mix until combined.
-Shape the mixture into 6 patties, making sure you leave a indentation in the center of each.
-Preheat the canola oil in a large skillet over medium high heat.
-Add the patties and cook on each side until they’re nicely caramelized and brown (they do not have to be completely cooked through as they’ll still be going in the oven).
-Remove the patties and place them in a large baking dish that has been sprayed lightly with oil.
-Top each burger (or only half, LOL) with one drained pineapple ring each.
-Top each burger with approximately 2 – 3 tablespoons of the mozzarella cheese.
-Cook the burgers in the oven for approximately 10 minutes or until the cheese has completely melted and the burgers are no longer pink inside (165 degrees).
-Sit, eat, enjoy…repeat LOL!!!

I served ours with a nice side salad and some assorted veggies I had in the freezer.

It was a completely delicious dinner and “I can’t believe I ate the whole thing” (times two) *wink*

Be happy, be healthy and just know that sometimes you just have to give into temptation!
