As a family, we’ve decided we’re going to start eating a lower carb diet. Since that’s the case, you’ll be seeing more and more recipe on this site that are of the low carb/keto variety. That said, since I’ve always loved sharing a wide array of delicious recipes with you here, from appetizers to desserts, I do not plan on entirely refocusing my blog in that way.

However, what you CAN expect is a generous sprinkling of lower carb and keto inspired recipes in between all the other cooking and baking recipes you’ve come to love and expect from Kudos Kitchen. Something for everyone is my motto, along with a pinch or two of everything in moderation. 🙂

This recipe for Garlic Lovers Pork Chops was completely inspired by a trip I’d taken to our local warehouse superstore (aka Costco).

During that trip, and on a whim that I picked up one of those mega-sized bags of whole, peeled garlic cloves and tossed it into my cart. While I wasn’t quite sure what I would do with so many peeled garlic cloves (there must have been at least 500 or more cloves of garlic in that bag), my mind was excitedly thinking of all the delicious possibilities!

One Pan Ponzu Pork Chop Dinner w/Sweet Potatoes, Apples & Onions

This One Pan Ponzu Pork Chop Dinner is a sure-fire family pleaser which takes only minutes to prepare. You’ll only need a vegetable peeler and chef’s knife to prepare and slice the apples, onions, and sweet potatoes. Then the majority of the work is done by the oven while you go relax for 40 minutes until dinner is wonderfully caramelized and ready to serve. Easy peasy, pork chop pleasy! 🙂
