The recipe I’m sharing with you today uses homemade lemon curd (but as I stated earlier, store bought will also work) which is a combination of eggs, sugar, freshly squeezed lemon juice and butter. It’s very simple to make as long as you use a double boiler and heat the mixture slowly on the stovetop.

For this recipe of Bacon Roasted Fingerling Potatoes with Herbs I used the multi-colored fingerling potatoes (red, yellow and purple) that can be purchased in small bags in the produce department. If you can’t find them, or if you want to use the regular all yellow fingerling potatoes, go for it.

Couscous Salad with Feta and Asparagus is a fast and tasty side dish that takes only 10 minutes to make and pairs well with any protein. My favorite is lamb chops. Mmmmm.
