Copycat Sunflower Crunch Kale Cabbage Salad

The reason I call this a “copycat” salad is that it mimics my favorite bagged salad which I purchase in the produce section of the market.

However, if I’m totally honest here (and why wouldn’t I be?), my Kudos Kitchen version is even better than that bagged version because I’ve added dried cranberries to the mix, and I’ve also added apple cider (you can use apple juice if needed) to thin the dressing, and for a little touch of extra sweetness.

Healthy Sautéed Creamed Spinach & Strawberry Side Dish with Pistachios

This dish of Sautéed Creamed Spinach & Strawberries came about one night when I was contemplating a side dish to serve with some fish I was cooking.

Since I had strawberries in the fridge that I needed to use before they spoiled, I tossed some into the sauteed creamed spinach I was preparing. The completed dish tasted amazing, and it was a feast for the eyes as well as the taste buds!

Fresh Healthy Broccoli Salad from Valerie’s Home Cooking Cookbook

The majority of the recipes you’ll find here on Kudos Kitchen are my own original creations. However, from time to time because of my blog I’m approached by publishing houses about doing cookbook reviews. This post (and the recipe for Healthy Broccoli Salad) is one such review. All the opinions I share are 100% my own.

Smoky Sweet Bacon Wrapped Chicken Breast

The secret to keeping these bacon wrapped chicken breasts so moist, tender, and flavorful (besides the bacon wrapping), is to bathe the chicken in a saltwater and sugar brine for 30 minutes before seasoning and wrapping the breasts in bacon. The difference the brine makes is unmistakable and is well worth the extra 30 minutes of basically hands-off time.

Antioxidant Rich Blood Orange Salad with Blueberries & Feta

I have a confession to make, I’d never even tried a blood orange before making this Blood Orange Salad.

Oh sure I’d seen them in the stores often enough, and on other people’s blogs, but since I’m not that fond of eating citrus fruits on their own, I’ve never added them to my shopping cart. However, now I’m in love with them and I’m never looking back!!
