Sweet & Savory Prosciutto Wrapped Pineapple Spears #BrunchWeek

When I know I’m going to indulge in a decadent weekend brunch with all of my favorite foods; I like to start the meal off with a bit of pineapple. I’ve heard that pineapple helps melt away belly fat, but don’t quote me on that, because it’s not really true!

However, since I like to *THINK* it may be true I’ve convinced myself that it’s a great way to kick off #BrunchWeek and that maybe all those other calories to follow won’t actually count. Ha! Ha!

Family Favorite Egg Sandwich Breakfast Casserole

Within my family, I’m the self-proclaimed queen of the egg sandwich. I think my husband and sons would concur, but you’d have to ask them to be sure. That said, many months ago I had this idea to take my famous egg sandwiches over the top to fabulous, and I came up with an idea for this egg sandwich casserole. And, if I do say so myself, it’s pretty darned incredible!!

Cocoa Coconut Banana Bread

If you’d like to up the chocolate ante of this bread (nice, but certainly not necessary), feel free to add some semi-sweet chocolate chips to the batter before baking. And, as I’m always prone to do (but didn’t do this time), tossing in some chopped toasted nuts is never a bad thing in my book. But, if you’re giving it as a gift, sometimes the simpler the better.
