Lemon Ginger Shrimp Sheet Pan Supper

To get even cooking for this sheet pan lemon garlic shrimp meal, you’ll have to flip and stir the contents at least once during the roasting period and make sure that all the ingredients are in an even layer when you return them to the heat. You’ll also need to make sure to cut the potatoes into small size chunks, so they’ll cook at the same rate as the shrimp. Then, as soon as the potatoes are fork tender and the shrimp are pink and opaque, dinner is ready.

Cauliflower Sweet Potato Mashers

I adore mashed potatoes.

I don’t know of anyone who doesn’t. I’ve made regular mashed potatoes, mashed sweet potatoes, mashed Idaho and sweet potatoes, mashed potatoes with celery root, mashed potatoes with pumpkin, plain mashed cauliflower, and now this recipe for cauliflower sweet potato mashers.

This is, by far, my new favorite!

Apple Cider Braised Chicken Breasts

I had chicken breasts in the freezer, apple cider in the fridge, a half a box of gingersnaps left in the pantry, a few sweet potatoes that I needed to use before they went bad, and friends coming for dinner.

The result was this Apple Cider Braised Chicken with Sweet Potatoes and Gingersnaps. This dinner FAR surpassed my expectations, and was a massive hit with our guests! Winner! Winner! Chicken dinner!!

This new recipe I call Sunny Side Up Hash Brown Breakfast Pizza uses pop-tube crescent rolls, frozen shredded hash browns, American cheese slices, eggs, diced ham, and chopped scallions for garnish.
