Why sweet corn and shallots along with the garlic you ask? Because I spotted it in the market and immediately thought of it as a topping for this focaccia! I’m not quite sure why, but I’m glad I did, especially with sweet corn season on the way. I think you’ll be taken by the sweetness that the corn lends to the savory, garlicky focaccia. And the light oniony flavor that the shallots provide is the perfect compliment the headiness of all that garlic.
I have tons of fun Easter memories from when my kids were little, but I wish I would have thought of these at that time. I know they would have enjoyed them. Of course that doesn’t stop me from making them for myself. I’ve always been a sucker for a bunny! Happy Spring every bunny!!!
