Healthy Broccoli Salad with Sweet and Sour Dressing

Ingredients

For the salad:

  • 4 cups fresh broccoli, cut into bite-sized pieces
  • ½ cup chopped scallions (green onions)
  • 2 cups red grapes, halved
  • 1 head red leaf lettuce torn into bite-sized pieces
  • ¼ cup slivered almonds toasted lightly in a dry skillet
  • ½ teaspoon kosher salt (optional)
  • ½ teaspoon cracked black pepper (optional)

For the sweet and sour dressing:

  • ½ cup red wine vinegar
  • 2 tablespoons granulated sugar
  • 2 tablespoons soy sauce (reduced sodium is preferred)
  • 1 tablespoon extra virgin olive oil

Instructions

To make the salad:

  • Toast the almonds in a small skillet over medium until lightly golden (approximately 2 minutes). Set aside.
  • Place all the salad ingredients into a large bowl and toss to combine.

To make the sweet and sour dressing:

  • Whisk together all the dressing ingredients in a small bowl until combined.
  • Pour the dressing over the broccoli salad and toss well to combine.
  • Top the salad with the toasted almonds and serve immediately or chill for 1-2 hours, and serve cold.

Notes

Store the salad in the refrigerator (undressed and covered) overnight if making it ahead.
