There are so many terrific convenience products in the grocery store, and as I’ve always been drawn to the produce department in particular, some of my favorite products are from a company called Gourmet Garden. The recipe I’m sharing today for Roasted Red Potatoes with Lemongrass, Garlic & Cilantro takes advantage of two of their products. 

Roasted Red Potatoes with Lemongrass, Garlic & Cilantro may be one of the very favorite potato side dishes I’ve ever made. I appreciate how easy these potatoes are to throw together, and I especially love that the oven does most of the work turning them all caramelized and crunchy on the outside and creamy and soft on the inside.

Roasted Red Potatoes with Lemongrass, Garlic & Cilantro makes a perfect side dish for just about any protein. Roasted Red Potatoes with Lemongrass, Garlic & Cilantro Paste

If you’re not a cilantro lover, never fear. You can always substitute Gourmet Garden’s basil paste for the cilantro paste, or leave it out altogether. Or, should you decide that lemongrass isn’t your thing, what about a squirt or two of Gourmet Garden’s ginger paste in with the potatoes before roasting? I think I’ll try that next time for sure because I like the sound of roasted potatoes with ginger. I think they would be fabulous!

Caramelized Roasted Red Potatoes with Lemongrass, Garlic & Cilantro are crispy on the outside and creamy on the inside. They're an easy yet impressive side dish to serve family or guests.

Ingredients
  • 3 pounds red potatoes, cut into 2 inch pieces
  • 3 tablespoons oil (I used a canola/olive oil blend)
  • 1½ teaspoon kosher salt
  • ½ teaspoon pepper
  • 2-3 tablespoons cilantro paste
  • 2-3 tablespoons lemongrass paste
  • 2-3 cloves garlic, minced
  • 1 tablespoon fresh lemon zest
  • Tools and equipment:
  • baking sheet
  • large bowl
  • microplane
  • wooden spoon
  • spatula
  • chef's knife
  • cutting board
Instructions
  1. Preheat oven to 425 degrees.
  2. Place all of the ingredients in a large bowl, and mix well to combine.
  3. Pour the potatoes out onto a baking sheet and roast for 35 minutes in the preheated oven.
  4. Remove the potatoes from the baking sheet with a spatula and serve hot with additional lemon zest if desired.
