Antioxidant Rich Blood Orange and Blueberry Salad is layered with wonderful flavors, colors and textures. Eating healthy never tasted so good!
True confession time; I’d never even tried a blood orange before making this Blood Orange and Blueberry Salad. Oh sure I’d seen them in the stores often enough, and on other people’s blogs, but since I’m not that fond of eating citrus fruits on their own, I’ve never added them to my shopping cart.
It wasn’t until I heard someone on television describe the taste of blood oranges being a combination of oranges and raspberries (I happen to love raspberries) that I decided to give them a try and find out what I’d been missing. Enter *stage left* Antioxidant Rich Blood Orange and Blueberry Salad.
I don’t know about you, but I love a salad that’s packed full of all sorts of flavors and textures. One that’s full to the rim with colorful ingredients, and one that I can feel good about eating because I know that I’m doing something good for my body. This Antioxidant Rich Blood Orange and Blueberry Salad is just that!
Along with the deeply colorful blood oranges and blueberries, I’ve added the healthy monounsaturated fat from everyone’s favorite, the avocado. Red onion slices add a tart and tangy bite, while the goat cheese crumbles add a creamy richness that offsets the tartness of the onion and provides bone-friendly calcium without all that stomach upsetting lactose. And last, but certainly never least, crushed pistachios for their cholesterol lowering, anti-aging properties and, of course, their undeniable crunch and flavor. Not to mention all that sits on top a bed of super healthy mixed baby greens and spinach leaves.
Yes, sir! This Antioxidant Rich Blood Orange and Blueberry Salad will do your body good!

I’ve topped my salad with an easy to make Homemade Tangerine Balsamic Dressing (recipe to follow) which adds just the right amount of sweetness to the salad, and compliments the flavor of the blood oranges quite nicely. I’m leaving the Amazon affiliate link for the tangerine balsamic vinegar below if you’re interested in purchasing. However, please feel free to substitute your favorite balsamic vinegar (it doesn’t need to be fruit infused) in place of the tangerine balsamic, and then follow on with the dressing recipe as written. The tangerine balsamic vinegar is only a flavor option, and certainly not required.

- For the salad:
- 3 - 4 cups mixed greens and baby spinach leaves
- 2 blood oranges, peeled and sliced
- 2 cups fresh blueberries
- ¼ cup thinly sliced red onions
- 1 avocado, pitted and sliced
- 3 ounces goat cheese, crumbled
- 1 cups chopped pistachios
- ½ teaspoon salt
- ¼ teaspoon pepper
- For the dressing:
- ½ cup extra virgin olive oil
- ¼ cup tangerine balsamic vinegar (or your favorite balsamic vinegar)
- 1 tablespoon Dijon mustard
- ¼ teaspoon poppy seed
- ¼ teaspoon ground coriander
- pinch salt
- pinch pepper
- Place the greens in the bottom of a large, shallow salad bowl.
- Layer the remaining ingredients over the greens.
- Place all the dressing ingredients into a jar with a tight fitting lid and shake vigorously to combine.
- Drizzle the dressing over the salad and serve cold.
So treat your body (and mind) like the Wonder Woman you are. And while you’re at it, don’t forget that wine is good for you… within moderation, of course! 😉
