I’ve not shared a homemade yeast bread recipe with you since last winter. Which makes this recipe for Easy To Make Whole Wheat Honey Ricotta Yeast Bread way overdue! But, good things come to those who wait, so today is your lucky day! 🙂

Honey Ricotta Yeast Bread

If you’re new to baking homemade bread, I have a few key tips for you that will ensure your success in the kitchen. First, make sure your active dry yeast isn’t too old. Unless you bake a lot of bread year-round, it’s always best to err on the side of caution and purchase new yeast during the fall when the bread baking season begins (at least in my Kudos Kitchen).

Second, when dissolving the yeast in warm liquid (water, milk, etc.), make sure your liquids aren’t too hot as that will kill the yeast, and you’ll never get the rise that a healthy and well-made loaf of bread has. The liquid temperature for yeast recipes usually only varies slightly. The liquid temperatures or a yeast recipe will normally only feel slightly warm to the touch, never hot!

And lastly, let the yeast do the work. The majority of the time spent in making a yeast dough is in the resting and rising process. This time is a non-active time for the baker (you), so when you see a bread recipe calling for three or more hours to complete, DON’T PANIC! Remember that the majority of that time is when the yeast is busy doing its own thing, so you can be off doing your own thing!

Let’s get busy baking this Easy To Make Homemade Whole Wheat Honey Ricotta Yeast Bread. It will be ready to eat before you know it, and your house will smell amazing!

In a medium bowl, add softened butter, warm water, and honey.

To the same bowl, add ricotta cheese and sugar. Whisk to combine the ingredients. In a large bowl, add whole wheat flour, bread flour, yeast and salt.

Whisk the dry ingredients to combine. Pour the wet ingredients into the dry ingredients and stir well until a soft ball forms and comes away from the sides of the bowl.

Turn the dough out onto a lightly floured surface and hand knead the dough (press, fold, turn, press, fold, turn) until the dough is smooth and elastic.

Add the dough into a clean bowl that has been sprayed with olive oil spray. Spray the top of the dough with additional olive oil spray, and cover the bowl with plastic wrap. Allow the dough to rise until doubled in a warm, draft free place (approximately 60 minutes).

Turn the dough out onto a clean counter and roll into an approximate 9″ x 12″ rectangle. Roll the dough (from the short side) to fit a loaf pan that has been sprayed with olive oil cooking spray and place the bread, seam side down in the pan. Allow the bread to rest until doubled (approximately 45-50 minutes) in a warm, draft free place.

Preheat oven to 350 degrees and bake the bread until the loaf sounds hallow when tapped (40-45 minutes) and is nicely golden brown. Remove the bread from the oven and allow to cool for 20 minutes before turning it out onto a cooling rack to cool completely. When cooled, slice and serve.

Makes: 1 loaf
Ingredients
  • 3 tablespoons softened butter
  • 3 tablespoons honey
  • ½ cup very warm water (110 degrees-115 degrees)
  • 2 tablespoons sugar
  • 1 cup ricotta cheese
  • 1 cup whole wheat flour
  • 1 cup bead flour, plus additional for kneading
  • 2 teaspoons instant dry yeast
  • 2 teaspoons salt
  • olive oil spray
Instructions
  1. In a medium bowl, stir together the butter, honey and warm water.
  2. Add the sugar and ricotta cheese and whisk into the butter and water mixture.
  3. In a large bowl whisk together the whole wheat flour, bread flour, yeast, and salt.
  4. Switch to a wooden spoon and stir the wet ingredients into the dry ingredient bowl.
  5. Stir vigorously until the dough forms a ball and comes away from the sides of the bowl.
  6. Turn the dough out onto a lightly floured surface and knead by hand for 3-4 minutes until the dough becomes smooth and elastic.
  7. Oil the inside of a medium bowl with olive oil spray and place the dough ball in the bowl.
  8. Spray the top of the dough with oil and cover the bowl with plastic wrap.
  9. Allow the dough to rise until doubled in volume (approximately 60 minutes) in a warm, draft free place.
  10. Turn the risen dough out onto a clean counter and roll into an approximate 9" x 12" rectangle.
  11. Roll the dough, starting from the narrow end and place the log seam side down in a loaf pan that has been sprayed with olive oil spray.
  12. Allow the dough to rise until doubled in bulk (approximately 40-50 minutes) in a warm, draft free place.
  13. Preheat oven to 350 degrees.
  14. Bake the bread in a preheated oven for 40-50 minutes, or until it golden brown and sounds hallow when tapped.
  15. Cool the bread on a wire rack for 15 minutes and then turn the bread out of the pan and continue cooling on the rack until completely cooled.
  16. Slice, serve, and enjoy!
