No-Bake Chocolate Peanut Butter Drop Cookies


I think peanut butter is my favorite food. If it's not the very top of my list, it's definitely in my top five! When I saw this no-bake recipe for Chocolate Peanut Butter Drop cookies in a Cooking Light cookbook I own called "Lighten Up, America!", I knew I had to make them!


Plus, I know it's hard to believe, but I really didn't do too much different to the recipe in the cookbook except I added a little more peanut butter than what was originally called for, and I added a pinch of salt. You can now consider this recipe "lightly" adapted from the Cooking Light cookbook called "Lighten Up, America!" Seems appropriate, don't you think. LOL

NO-BAKE CHOCOLATE PEANUT BUTTER DROP COOKIES   {PRINT THIS RECIPE}
Yield: 18-21 cookies    Prep Time: 10 minutes    Chill Time: 30 minutes   Calories: approx. 84 each cookie

1 cup granulated sugar (I used coconut palm sugar)
1/3 cup butter
1/4 cup un-sweetened cocoa
1/4 cup 2% reduced-fat milk
1/4 cup semi-sweet chocolate chips
1 pinch salt
1/2 cup peanut butter (I used creamy)
1 teaspoon pure vanilla extract
2 1/4 cups uncooked quick-cooking oats

-In a medium saucepan over medium heat, melt the butter and sugar together until the sugar has dissolved. Stir in the cocoa and milk and heat through.
-Turn off the heat and add in the chocolate chips, salt, peanut better and vanilla. Stir until the chocolate and peanut butter have completely melted.
-Stir in the oats to thoroughly combine all ingredients.
-Drop mixture onto a parchment lined baking sheet using a melon baller or tablespoon.
-Refrigerate until firm (approximately 30 minutes)

These little cookies pack a powerhouse of flavor. The intense rich chocolate flavor combines perfectly with the peanut butter, and I'm happy to report that the peanut butter does not get lost within all that chocolate. It stands its ground perfectly. Plus, the health benefits and fiber that the oats bring to the party are reason enough to have at least one (or two) of these delightfully easy and tasty cookies whenever you have a craving for something sweet. After all, we all know the benefits of dark chocolate, right?  So, eat them for your health, if nothing else! You're welcome :)

Pair these cookies with a nice glass of milk or a hot cup of tea and you'll have no reason to feel grumpy or grouchy (unless of course, it's in your nature). LOL
