This side dish is a perfect accompaniment to any meal but it was especially tasty with last night's salmon.
It takes about 10 seconds to whip together (OK, maybe I exaggerate a little here) and 1 cup of the dressing has only 70 calories. Add it to a store bought coleslaw mix and you're completely good to go and healthy too!
ASIAN PEANUT SLAW
1/2 cup rice wine vinegar
3 tablespoons peanut butter (I used a natural, chunky variety)
1 tablespoon hoisin sauce
1 teaspoon sesame oil
1/2 teaspoon red pepper flakes
1 teaspoon ground coriander
1 teaspoon dark brown sugar
salt and pepper to taste
1 bag coleslaw mix
chopped cilantro for garnish (if desired)
-In a mason jar (or other vessel with a tight fitting lid), add the first 7 ingredients and with the lid on tight, shake well to blend all the ingredients.
-Add the slaw to a large bowl, season with salt and pepper.
-Pour the dressing over the coleslaw and mix well to coat all the slaw with the dressing (I think tongs work best for this).
-Refrigerate until ready to serve.
-Top with the chopped cilantro and serve alongside your favorite protein.

Peanut sauces are great and I'm so grateful that I'm not allergic. Your plan for lunch sounds delicious too.
ReplyDeleteThat sounds so good. And I have a head of cabbage. And I want this for dinner--tomorrow. And I have everything, except hoisin sauce, I don't think I have that. I know I have oyster sauce. hmmm
