Chewy Oatmeal Apple And White Chocolate Cookies

These are by far the best cookies I've baked in a long time.  The apples keep the cookies moist and chewy while the white chocolate is a perfect compliment to the oatmeal.  I think even Granny Smith herself would approve!

Chewy Oatmeal Apple and White Chocolate Cookie Recipe


CHEWY OATMEAL APPLE AND WHITE CHOCOLATE COOKIES  {PRINT THIS RECIPE}

1 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon pure vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
3 cups quick cooking oats
1 Granny Smith apple, peeled, cored and diced
6 ounces white chocolate chips

-Preheat oven to 350 degrees
-In a large bowl, cream the butter and sugars until light and fluffy.
-Beat in the eggs and vanilla.
-In another large bowl, blend the flour, cinnamon, baking soda and salt.
-Gradually add the dry ingredients into the creamed butter mixture and stir to combine.
-Add the apples and chocolate chips. Stir well.
-Drop by rounded tablespoons on parchment lined baking sheets.
-Bake for 18-22 minutes, rotating the cookie sheets half way during the baking process.
-Remove from oven, cool slightly and remove the cookies to a wire rack to cool completely.

  4. You have oats in the ingredients list but not in the directions... I assume they go in with the other dry ingredients? I flash-froze the dough balls, which prevented them from spreading and browning too quickly on the edges, and I subbed coconut oil in for the butter. These were HEAVENLY... thanks for giving me a way to use up the rest of my 224 apples! xxx, j

    1. Whoops, my bad. I'm so sorry that I messed that up. That said, I'm glad you figured it out and enjoyed the cookies. Love that you substituted coconut oil. What a great idea! I'll try that next time too :)
