Skillet Potatoes With Bacon And Apples



I know that in comparison to most food bloggers my photos leave a lot to be desired.  I don't know much about photo composition, lighting, set up and I rarely ever edit them.  One thing I do know is that I can hold my own in the home cooking department and this side dish I concocted last evening was a absolute winner! 

                                       
In a large skillet I browned 5 slices of thick cut bacon, until crisp. Leaving the bacon renderings in the pan, I removed the bacon and then added 7 medium Yukon Gold potatoes, which I had sliced into 1/4" thickness and 1 large red onion, diced to match the potato size.




Adding salt and pepper to taste, I browned the potato and onion mixture over medium high heat on the stove top making sure not to turn them too often so they could develop a nice brown crust.  When the potatoes were tender and nicely browned, I added the bacon back into the skillet.  At this point I also peeled and sliced 1 large pink lady apple, added it to the skillet and continued to cook over medium heat until the apple was warmed through.


It was DELISH and a great accompaniment to last night's bacon wrapped pork tenderloin. YUM!  I hope you enjoy this side dish idea and that you'll try it yourself sometime.

  1. Yum, these look so good. I love bacon! Your recipe is similar to one of my favourite side dishes from Easy Cooking for Today - A Guide to American Cooking called O'Brien Potatoes except you added the apple which was a great idea.
    BTW...your photos are just fine :)

    Yes, you're right it is...but that's what makes it so darn tasty :) Plus, we certainly don't eat like this every night.
