Because of not writing things down, all of the measurements are subject to your taste. Add a lot of something if you like it a lot, add a little if it's not one of your favorites. And don't forget, anything can be switched to suit your tastes. Here are some of the ingredients I used:
l pound Italian sausage removed from casings, 2 cans fire roasted tomatoes, frozen spinach, whole wheat pasta, fresh basil leaves, chopped fresh garlic, olive oil, salt, pepper.
Brown the Italian sausage thoroughly in a small bit of olive oil in a skillet over medium high heat. Meanwhile, cook the whole wheat pasta in a large stock pot with salted water until just tender (10-11 minutes), drain.
Add the 2 cans of fire roasted tomatoes, 1 bag of bag frozen spinach and your garlic to the saute pan with the sausage. Season with salt and pepper as you go. Heat through on medium. Combine the sausage tomato mixture with the pasta in the large pasta pot and continue to heat on low to combine all the flavors. Add as much chopped basil leaves as you like and top the entire dish with fresh grated Parmesan cheese. I forgot to do this step in the picture process but don't YOU forget. It brings a wonderfully salty, nutty component to the party that you don't want to be without.
